News: Germany-based Mühlenchemie has set up a pilot plant in Ahrensburg, Germany, in a move to offer additional services to pasta manufacturers. The company has opened its Ahrensburg laboratory to verify the possible effects of enzymes and other additives on noodle products before the start of commercial production of pasta. The new project will enable the company to provide recommendations and practical solutions to pasta manufacturers, according to Mühlenchemie's managing director Lennart Kutschinski.
BMI View : Within the German pasta sector, per capita consumption of uncooked pasta is almost double that of prepared pasta. In 2012, per capita consumption of uncooked pasta stood at an estimated 7.9kg, compared with 4.5kg for prepared pasta. BMI is forecasting that per capita consumption of uncooked pasta will rise to 8.5kg by 2017, while that of prepared pasta will reach 5.7kg over the same time period.
